Easily made with pumpkin, vegan protein, oats, coconut flour, egg whites, spices, and chocolate chips, these soft-baked pumpkin bars will be your new favorite high-protein sweet snack.
These bars are:

Pumpkin Chocolate Chip Banana Bread Bars
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 9 bars 1x
- Diet: Gluten Free
Instructions
Place all ingredients (except chocolate chips) into a food processor and blend on high until pureed smooth. Pour mixture into a well-oiled baking square (8×8) or one that has been lined with parchment paper and sprinkle with chocolate chips. Bake at 350 degrees F for 30 minutes or until a knife comes out clean from the center. Let cool completely before slicing into 9 squares. Keep in the fridge for up to 5 days.
These bars are so easy to make and KID-APPROVED too for all you parents out there. They make a great sweet treat to pack in a lunchbox for work/school or for a little afternoon pick me up with a cup of coffee.
I have made these several times since first creating the recipe and I love them more every time. I’d almost call this CAKE instead of bars because the texture is so perfectly light and fluffy, but I’ll go with bars so they feel more snack-y. 😉
